Hello Jonathan, do you know where Bisq development is located? I'm not real clear in how a DOA functions, can the US demand information and who would they demant it from? I look at non KYC as future proofing given how the US is progressing.

The wallet that you set up when you first run Bisq is not a multi-sig wallet. I think what you´re talking about is the 2-of-2 multisig escrow where the bitoin is stored for a trade. So if you set up Bisq and send bitcoin to its wallet, it´s in a singile-sig wallet. If you enter a trade, some bitcoin gets placed into a 2-of-2 multisig escrow.
